As we seek to spend more time outside this month, it’s nice to keep other areas of life extra easy if you’re trying new, hard things. Here are some foods that are really easy for taking with you on outdoor adventures!
Breakfast
Protein Muffins
This blender recipe adapted from Ambitious Kitchen is quite good the next day (perfect to make ahead then take on-the-go), and it’s more filling than you would expect! Another great option is the Kodiak Cakes Double Chocolate muffin mix.
Preheat oven to 350 F and grease your muffin pan.
Blend 2 cups of oats into flour.
Add 3 bananas, huge handfuls of spinach, 3 eggs, 3 Tbsp honey, 3 Tbsp chia seeds, 1 tsp vanilla, 1/4 c cocoa powder, 1 tsp baking soda, and 1/2 tsp salt.
Pour batter into the muffin tins, and stir in chocolate chips to your liking.
Bake for about 20 minutes. Let cool and enjoy! They are seriously good the next day.
Lunch
Peanut Butter, Banana, Nutella Sandwiches
Adding a light smear of Nutella to a simple classic makes it a lot more appetizing…especially if you choose to use whole wheat bread and natural peanut butter with your bananas 😉
Dinner
Cheese Board
Lay out a picnic blanket (or table cloth) to whatever outdoors you have—even if it’s a patio or driveway—and enjoy a snacking meal from a communal plate. Serve it straight from the cutting board; cleanup is easy as can be!
Egg-Bacon-Sweet Potato Burritos
Burritos are excellent to make in large batches, wrap in foil, and heat up in the toaster oven before you head out for an adventure.
This batch was made by cooking eggs, bacon, and sweet potatoes (seasoned with smoked paprika, garlic, and salt) and wrapping them up in a whole wheat tortilla. It also helps to add shredded cheese to hold everything together!
