Hello! Since this week we talked about having poetry teatime, this week’s recipes are all about things that would be good to serve at a tea party. They could be fancier, but easy, healthy, and kid-friendly were the main goals here 😉 We made all these recipes in about an hour. Also, read on for some pro tips from a reader who has been doing poetry teatime with her family for years!

Now let’s check out some simple foods to assemble!

Tea Sandwiches

Simply make a sandwich (like with turkey and cheese, maybe some fruity jam), press it down quite flat, and cut off the crusts. You can mince the crusts in your blender to make breadcrumbs for a future recipe, like Sneaky Cauliflower Mac ‘n’ Cheese! Once our sandwich was a square, we cut it into four triangles.

Lemon Herb Meltaway Cookies

We made approximately a 1/4 batch of this recipe from Cooking Classy and used mini marshmallows instead of frosting.

Preheat oven to 350. Combine a heaping 1/3 cup of flour, 3/4 tsp of cornstarch, a pinch of salt, 1/4 cup of powdered sugar, 1/4 cup of unsalted butter at room temperature, zest from a large lemon, and an egg yolk. Roll the dough into tiny little balls (we got 13 mini cookies out of this batch) and bake for seven minutes or so. Top with more lemon zest and make a little frosting if you wish!
